Job Description
OPERATIONAL:
• Prepare all types of sushi, including maki, nigiri and sashimi.• Coordinate with the wait staff to ensure proper cooking, considering special requests and food allergies.
• Create a rich sushi menu with various main ingredients and raw fish (for example, salmon, tuna, unagi).
• Monitor food stock and place orders, as needed.
• Add additional flavors to sushi rolls with ginger, rice vinegar, wasabi and soy sauce, when appropriate.
HEALTH, SAFETY & SECURITY:
• Maintain the required standard of operational hygiene according to cleaning rotas at all times.• Be aware of the Restaurant policies and procedures relating to health, hygiene, and fire life safety and ensure your direct reports do the same.
